Harvesting endive roots - Witloofwortelen rooien
2007-10-26 Belgium (Herent)

Harvesting endive roots with 1-row Verstraete harvester.
Very light and simple harvester, very popular, easy to operate and maintain. Its light construction and big wheels allow to harvest even in wet conditions, without requiring too much horsepower.

Re: Harvesting endive roots - Witloofwortelen rooi
The roots are being harvested from the field, before the first frost.

The real vegetable is only grown afterwards, during autumn and winter period, by letting the roots sprout again in a dark environment. This gives white-yellow "Belgian Endives".
